A couple of days ago I was making a salad because I was so happy I had just bought quinoa and had no idea what to put in it. So I threw a whole bunch of random things together including two avocados. (I LOVE avocados.) The salad came out okay, but what stood out the most was the amazing texture the combination of avocado and quinoa created. It was creamy, rich and absolutely filling and delicious!
So this morning I bought two avocados that were definitely ripe (almost overripe, actually) and made guacamole. I'll put the recipe for this separate.
2 hass avocados (soft and ripe!)
Two flat teaspoons of onion powder or two tablespoons of red onion
Half a teaspoon of salt
Cut up and squeeze out the avocados onto a plate. Mash it up with a fork. Add the onion powder and salt. Squeeze the death out of one half of the lime and then add a little from the other half.
*I didn't have cilantro and I was starving so I just winged it. Feel free to add some as well.
Half a cup of dry quinoa
1 cup water
Throw them together in a pot and boil for about 15 minutes or until the water is gone. (Very similar to rice except it doesn't stick to the pot. Hooray!)
Cool off the quinoa in the fridge for about 20 minutes.
Add about half of the guacamole to the quinoa and mix until you get a yummy green dish that will fill you up and leave your stomach and palate very happy.
